Michael Pollan’s Vinegar-BBQ Sauce


  • Yield: Makes 3 cups -- enough for a 5 to 6 pound pork shoulder

  • 2 cups apple cider vinegar
  • 1 cup water
  • 1/4 cup packed brown sugar
  • 2 3/4 teaspoons fine sea salt
  • 4 teaspoons hot pepper flakes
  • 1 teaspoon freshly ground black pepper

Step 1: Combine the ingredients in a mixing bowl.

Step 2: Whisk until the salt and sugar crystals dissolve.
