Pita for Good Harissa

  • Equipment: food processor

  • 5 ripe tomatoes
  • 2 cloves garlic
  • 1 tablespoon smoked paprika
  • 1-1/2 teaspoons red pepper flakes (or more if you like it hotter)
  • 1 teaspoon kosher salt
  • 1 tablespoon red wine vinegar
  • 1/4 cup olive oil

Step 1: Bring ½ cup of water to a boil, remove from heat and add the red pepper flakes.

Step 2: Let soak for 10 minutes and drain.

Step 3: Add all the ingredients except for the olive oil into the bowl of a food processor.

Step 4: Turn food processor on and slowly drizzle in the olive oil until just combined.
