1/2 cup sugar
1/4 cup water
1 serrano or jalapeño pepper, stemmed and minced, with seeds
1 small red onion, minced
1/4 cup fresh lime juice
2 tablespoons fish sauce
2 tablespoons cilantro leaves, chopped
Step 1: In a small saucepan over high heat, bring sugar, water and pepper to a boil, stirring frequently, until the sugar has dissolved.
Step 2: Remove from heat, place in a small bowl and cool in refrigerator. When thoroughly chilled, stir in the remaining ingredients. Set aside until rice is done.
